    Don’t know if I’ve ever had chuck eye but I know I’ve had a regular chuck steak and I will never buy another one. I used to eat chuck steak when I was in my young twenties and could not afford to buy a quality steak. I used to eat chuck steak, round steak, and London broil, and they were all so damn tough that it was like eating shoe leather. The chuck steak was probably the worst because it was full of fat but it was not good soft tender melt-in-your-mouth delicious fat like on a ribeye. It was really really hard chewy fat.

  24. The only bad thing with the chuck eye is the lack of beef taste. Texture and marbling are really well. It has a lot of fat what can carry a lot of tasting but it just have nothing to carry. But still a good Cut.

  25. I tried cooking a chuck steak just like a ribeye and it was tough as hell. So, if you don’t mind tough meat, then yeah this is great.

    I assume chuck eye is different to chuck steak? Because you could never cook chuck steak like that… What you COULD do is slow cook chuck for hours on a low heat and then cook it like a steak.

  31. I think this is as good as a ribeye if not better. I find the flavour better cause it closer to the shoulder and it is just as tender as ribeye if you get the first or second eye cut.

  33. chuckeyes are especially good slow cooked (or pressure cooked if you don’t have much time).

    Basically, start it off with a sear, then put it in a pressure or slow cooker with some sliced onions, garlic slices, any spices or additional aromatics, and cook it beyond well done (to 200 F to get the connective tissues to break down). Ends up being fork tender and incredibly flavorful, without being too fatty

  34. It does taste as good as a Ribeyes..better than a filet. Filet is tender but not full of flavor. Chuck is the end of the ribeye. People are catching on and it’s getting expensive

  40. I go to the local hispanic markets and get ribeyes for the same price you paid for that. They have to readjust their bandsaw when I come in because this bolillo likes his steaks thick.

    Chuck eyes are no longer all that budget, atleast not near me.

  47. Not many store have chuck eye. I believe top blade or flat iron are better option. at about 7 bucks per lb.
